前書きなど

 和食は、2013年にユネスコ無形文化遺産に登録され、以前にも増して世界から熱い視線が注がれています。最近は、世界の多くの街で、ラーメン店、居酒屋、おにぎりの店などが増え、庶民の定番メニューも大人気になっているようです。そこであらためて、和食って何?と考えてみたくなったのがこの本を作るきっかけとなりました。
 私が最初に和食を意識したのは、30年前に交換ホームステイでオーストラリアの主婦が我が家にやってきた時です。彼女は朝晩のなんでもない日常の食事に、「なんてきれいで、へルシーな食事なの!」と感動し、外食で蕎麦を食べれば、ざるから小皿の薬味にまで興味津々でした。その後、私は料理を教えはじめるようになり、早20年。その間海外での料理イベントやクラスで、巻き寿司のデモンストレーションを行なったり、屋台の焼きそばなどを紹介したところ、大好評でした。和食の幅の広さと魅力に私自身も新たな発見をし、食は身近な外交で、国際交流の最大のツールだと確信しました。
 和食という言葉は、1920年代にはじめて国語辞典に登場したそうです。洋食が入ってきたことで、和食の特徴が浮かび上がったということかもしれません。発酵食品やだしなどの旨み成分の独特な味、四季を尊び、楽しむという伝統と豊かな感受性が和食に反映されていると思います。
 この本では、日常の和食を中心とした普段着の食文化を紹介したいと思い、受け継がれている伝統行事や食材の歴史や由来、道具なども含めて、身近にある食卓まわりをまとめてみました。異文化コミュニケーションのツールの一つとして、お役に立てれば幸いです。

With Japanese food, or “washoku,” added to UNESCO’s Intangible Cultural Heritage list in 2013, it’s drawing more international attention now than ever before. In cities across the globe, rustic staples like ramen, onigiri, or izakaya dishes are gaining popularity. But what really is Japanese food? I decided to write this book to revisit that question.
The first time I started to appreciate Japanese food was 30 years ago, when an Australian woman visited my house for a homestay program. She would exclaim how beautiful and healthy the meal was when served my ordinary no-frills breakfast. Dining at a soba restaurant, she admired everything from the sieve to the small plates of condiments and toppings. And now, after 20 years as a cooking adviser, I’ve hosted various events and classes across the world, filled with people eager to learn about food stall yakisoba or the perfect sushi roll. Through these experiences I have rediscovered the versatility and beauty of Japanese cuisine and firmly believe food to be the greatest tool for fostering cross-cultural understanding.
Tracing its roots, I learned that the word “washoku” was added to the Japanese dictionary in the 1920s. Perhaps the introduction of Western food spurred the necessity to define the characteristics of Japanese food. From the range of fermented products to the umami flavor in dashi stock, this cuisine reflects our unique tradition and rich sensibility of honoring the four seasons.
Here I introduce the everyday dishes of Japanese food culture, also touching upon annual traditions and the history of commonly used ingredients and tools. It’s my hope that this book will come in handy as another resource to communicate with people across nations and cultures.

山田玲子  (ヤマダレイコ)  (

クッキングアドヴァイザー
フェリス女学院大学卒。1995年から浜田山の自宅で料理教室「salon de R」を主宰し、家庭料理を中心に、おもてなしのコーディネートを楽しく大胆に伝授する笑いあふれるレッスンが人気。また、男子、父子料理教室などを通じて家庭での食の力の向上を伝えている。「食は一番身近な外交」をモットーに、海外各地で料理教室・イベントを開催し、食の国際交流に力を注いでいる。食品会社のレシピ開発、雑誌、ラジオ番組などでも活躍中。ビアソムリエ、酒エキスパート資格取得。主な著書に「おにぎりレシピ101」(2014 /ポット出版)、「NY発 サラダbowlレシピ」(2015/大和書房)など。
